This recipe is seriously the easiest! You just throw everything on a baking sheet lined with aluminum foil and bake. Did I mention that its super healthy too! I use whatever protein and veggies I have in the refrigerator. This recipe has become a weekly meal in our household. It’s budget and body friendly!
- Pick your protein (chicken breast, chicken thighs, sausage) I use 1-2 breast for my husband and myself depending on the size of the breast.
- Head of broccoli
- One red pepper or whatever color you prefer
- One sweet potatoes
- One onion
- 1/4 cup olive oil
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 /2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Preheat oven 400 degrees
- Mix veggies in a bowl with olive oil and spices and add to a lined baking sheet.
- Add protein on top of veggies. I typically cut mine into bite-sized pieces. If using chicken season with salt and pepper.
- Bake for 35 -40 minutes. Depending on what kind of veggies you use, you might need to adjust your time.
- Serve in your favorite bowl and ENJOY!
